Ingredients

  • 1 pound ground beef (80/20 preferred)
  • 1 medium onion (diced)
  • 1 packet (1 oz taco seasoning (or 2 tbsp homemade blend))
  • 1/2 cup water
  • 1 can (15 oz black beans, drained and rinsed)
  • 1 can (4 oz diced green chiles (optional))
  • 4 individual snack bags Fritos (or 1 large bag, 9.25 oz)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomato
  • 1/2 cup sour cream
  • salt and pepper to taste

Instructions

  1. Set your camp stove to medium-high heat, or build a campfire and let it burn down to a bed of glowing coals. Place a grate 4-6 inches above the coals.
  2. Heat the cast iron skillet over the fire or stove for 2 minutes until hot. Add the ground beef and diced onion. Cook, breaking the meat into small crumbles, until the beef is browned and no longer pink (about 6-8 minutes). The internal temperature should reach 160°F.
  3. Drain off excess fat if desired (I leave about 1 tablespoon for flavor). Sprinkle taco seasoning over the meat, add 1/2 cup water, and stir. Bring to a simmer, then reduce heat to low. Cook for 3 minutes until the sauce thickens.
