One-Pot Walking Tacos Family Dinner: No-Bowl Campfire Meal

There's something about eating straight from a chip bag that makes dinner feel like a win. No bowls to wash, no plates to balance on a knee. Just a warm, seasoned spoonful of meat and beans poured over crunchy Fritos, with melted cheese and cold sour cream cutting through the heat. This one-pot walking tacos family dinner is the campfire meal that keeps everyone happy and the cleanup almost nonexistent.

Why Walking Tacos Work at Camp

Walking tacos solve two camping problems at once: they're a complete meal in one hand, and they use only one pan. The key is the chip-to-filling ratio. I keep it at about 1/2 cup of meat mixture per 1-ounce snack bag of Fritos. That gives you enough crunch in every bite without the bag overflowing. The Fritos hold up better than tortilla chips — they stay crisp longer under the hot filling.

The Right Pan and Heat

A 12-inch cast iron skillet is my go-to for this. It holds a pound of meat, a can of beans, and still leaves room to stir without spilling. Over a camp stove, set the burner to medium-high. Over a fire, wait until the coals are glowing red with a thin gray ash — that's about 350°F to 400°F. If the flames are still licking, the meat will burn on the outside before it cooks through. Place the grate 4 to 6 inches above the coals for even heat.
