Baking Over the Fire
Set the skillet on the hot grate. Add a teaspoon of oil and swirl to coat the bottom and sides. The oil should shimmer — that's your signal the pan is ready. Pour in the batter. It should sizzle slightly on contact.
Cover the skillet with its lid or a tight tent of heavy-duty foil. Using tongs, place the reserved coals on top. Set a timer for 10 minutes. When it goes off, rotate the skillet 180 degrees. This evens out hot spots. Cook another 8-12 minutes.
Check for doneness with a toothpick or thin knife. Insert it into the center — it should come out clean or with a few dry crumbs. The top should be golden brown, and the edges will have pulled away from the skillet walls. If the top is still pale but the toothpick is clean, remove the top coals and let it sit on the grate for 2 more minutes to dry out the surface.
Common Mistakes and How to Avoid Them
- Burning the bottom: Too many coals underneath. Stick to 12-15, and keep them spread out, not piled directly under the center.
- Gummy center: Not enough top heat. Add more coals to the lid or foil tent. Also, don't open the lid too often — each peek loses heat.
- Crumbly texture: Too much cornmeal or overmixing. Use equal parts cornmeal and flour, and stir only until combined.
- Sticking: Skillet wasn't hot enough when you added the batter. Preheat with oil until it shimmers.
Adapting for Camp Stove or Grill
No campfire? No problem. On a camp stove, use a diffuser or the lowest flame setting. Preheat the skillet over medium-low, pour in the batter, cover, and cook 18-22 minutes, rotating halfway. On a charcoal or gas grill, set it up for indirect heat — coals or burners on one side, skillet on the other, lid closed. Check temperature with a grill thermometer: aim for 375°F (190°C).
