Quick Dutch Oven Camping Mac and Cheese

The first whiff of bubbling cheese and charred wood hits you before you even lift the lid. That's the moment this Dutch oven mac and cheese earns its place at your campsite. No boiled-over pots, no draining hot water into the dirt, no colander to wash. Just one pot, a handful of ingredients, and twenty minutes of patient fire-tending.

I keep the ratio at 12 ounces of dry pasta to 3 1/4 cups of liquid. That's the anchor. It sounds specific because it is — too much liquid and you get soup; too little and the pasta stays crunchy in the center. Whole milk and a splash of heavy cream give the sauce body without curdling over direct heat. Shred your own cheese from a block; the pre-shredded stuff has a coating that turns the sauce grainy.

Choosing Your Heat Source

This works on a camp stove, a grill, or over a bed of coals from a campfire. Each needs a small adjustment. On a camp stove, set the burner to medium and keep a close eye — the bottom of the Dutch oven heats faster than with coals. Over coals, you want a steady, even bed: about 10-12 coals under the oven and 16-18 on the lid for a 12-inch model. That gives you roughly 350°F (175°C) inside. If the fire is too hot, the milk will scorch. If it's too cool, the pasta turns to mush before the sauce thickens.
