One-Pot Grilled Camping Veggie Foil Packets
Heat and Timing
If you're using a campfire, let it burn down to a bed of glowing coals — not tall flames. You should be able to hold your hand about 6 inches above the coals for 3 to 4 seconds. That's medium heat. Place the packets directly on the coals or on a grill grate set over them. For a gas or charcoal grill, set it to medium (375-400°F).
Cook the packets for 15 to 20 minutes, flipping them once halfway through. At 15 minutes, the vegetables will be crisp-tender — the zucchini still has a little bite, and the peppers are just softened. At 20 minutes, everything is tender, and the tomatoes have collapsed. I usually check at 15 minutes and decide from there. The common mistake is to cook them too long over high heat. If the coals are too hot, the outside of the packet scorches and the inside stays raw. If that happens, move the packets to the edge of the fire or lift the grill grate higher.
Seasoning and Variations
Olive oil, garlic, oregano, salt, and pepper are a baseline. From there, you can add a splash of balsamic vinegar before sealing, or toss in a few sprigs of fresh rosemary. For a smoky kick, add a pinch of smoked paprika. If you want a more substantial meal, add pre-cooked sausage slices or chunks of firm tofu — just extend the cooking time by 5 minutes. For a dairy-free version, skip any cheese; for a gluten-free one, double-check your seasonings.
Serving and Safety
When the packets come off the fire, let them rest for two minutes. Then open carefully: cut along the top seam with a knife and peel back the foil, pointing the opening away from your face. The steam is hot. Serve directly from the foil or tip the contents onto a plate. Garnish with fresh parsley or a squeeze of lemon if you have it.
Keep a bucket of water or sand near the fire at all times. Use tongs to handle hot packets. If you prep the vegetables at home, store them in a sealed container in the cooler and use them within two days.
