Start with raw almonds and pumpkin seeds. Raw nuts absorb the coating better than roasted ones. Chop dried apple chips into thumbnail-sized pieces—they soften slightly during baking and become chewy at camp. Unsweetened dried cherries add tartness that cuts the richness of the oil.
Melt the coconut oil with maple syrup over low heat. Whisk in smoked paprika, garlic powder, and cayenne. The smoked paprika is non-negotiable—it gives a campfire-like depth without actual smoke. Pour over the dry mix and toss with your hands until every piece glistens. Spread on parchment and bake at 300°F (150°C) for 12 minutes. The mix should look dry and lightly clumped. Cool completely on the pan—this step prevents condensation in the storage bag.
Transfer to a sealed container or zip-top bag. Squeeze out all air. Store at room temperature for up to 2 weeks. Do not refrigerate—the moisture in a fridge will soften the nuts.
At Camp: The One-Pot Toast
Set a cast iron skillet over a camp stove or campfire grate on medium-high heat. Let it heat for 2 minutes—a drop of water should sizzle and evaporate instantly. Add the trail mix. Stir constantly with a wooden spoon for 3 to 5 minutes. You will hear the nuts pop and smell the smoked paprika blooming. The coconut will turn light golden. As soon as you see the first hint of brown on the coconut, remove the skillet from heat. The residual heat will continue to toast for another minute.
Let it cool for 2 minutes in the skillet before serving. The skillet retains heat, keeping the snack warm for 15 minutes on a cool camp table. Serve directly from the skillet—no plates needed.
Adapting for Different Heat Sources
For a camp stove, use medium-high heat and lift the skillet occasionally to control temperature. For a campfire, set the skillet on a grate 4 inches above the coals. If you have only glowing coals (no grate), nestle the skillet directly on the coals but rotate it every minute to avoid hot spots. For a grill, use the indirect heat side at 400°F (204°C) for 4 minutes, stirring once.
Safety note: Always use a heatproof glove when handling the skillet. Keep a small bowl of water or sand nearby to extinguish any sparks. Do not leave the skillet unattended on a campfire.
