2. Portion Into Foil Packets

Tear off four sheets of heavy-duty foil, each about 12 inches long. Spoon a third of a cup of the bean mixture into the center of each sheet. Fold the foil into a tight packet: bring two opposite edges together, fold down twice, then fold the ends in. Press out as much air as possible. These packets are your serving units—one per person per meal.

3. Pack the Chips and Toppings

Pour the corn chips into a quart-size zip-top bag. Press the air out slowly—if you rush, you’ll burst the bag. Lay the bag flat in your pack or inside a hard-sided container to prevent crushing. For the lettuce, wash and spin it very dry (a salad spinner at home is ideal), then place in a bag with a folded paper towel. Change the towel every 24 hours if you’re on a longer trip. Keep tomatoes whole in a small container; slice them at camp with a clean knife.

Assembly at Camp

Hand each person a bag of chips. Let them open it wide, then spoon one foil packet of bean mixture directly into the bag. This is the moment to use the back of the spoon to spread the beans evenly among the chips—don’t dump it in one lump. Top with lettuce, tomato, cheese, sour cream, jalapeños, and a squeeze of lime. Eat straight from the bag with a fork. No bowls, no plates, no cleanup beyond tossing the foil.

Common Mistake to Avoid

Do not pre-mix the bean mixture with the chips at home. Even if the mixture seems dry, the chips will absorb moisture over hours and turn soft. The packets keep the beans separate for a reason. Also, never use wet salsa or runny beans—drain the beans thoroughly before mashing. If the mixture looks dry, add a teaspoon of water at a time, but no more than two teaspoons total.
