Fruit Skewers: Color and Freshness
Fruit skewers add a bright, juicy counterpoint to the salty-sweet cones. I choose fruits that don't brown quickly: strawberries, melon balls, grapes, and blueberries. Wash and dry them thoroughly โ moisture makes the skewers slide. Thread the fruit onto 6-inch wooden skewers, leaving a 1-inch handle at the bottom. I alternate colors: red, green, purple, red.
The trick to keeping them fresh is a damp paper towel. Line a shallow container with a damp (not wet) paper towel, place the skewers in a single layer, and cover with another damp paper towel. Seal the container and refrigerate. This creates a humid microclimate that prevents fruit from drying out. They'll hold for 24 hours. For longer storage, use firmer fruits like apple wedges tossed in lemon juice (1 tablespoon lemon juice per cup of water, soak for 2 minutes, then drain).
Foil-Packet Dip: Creamy and Portable
This dip is inspired by the foil-packet method, but made ahead and served cold. The base is cream cheese and Greek yogurt โ the yogurt adds tang and lightens the texture without making it runny. I use a 4:1 ratio of cream cheese to yogurt. Let the cream cheese soften at room temperature for 20 minutes before mixing. Beat until smooth, then stir in honey and cinnamon. The honey should be just enough to sweeten โ about 2 tablespoons per cup of cream cheese.
Portion the dip into small jars or containers (4-ounce mason jars work well). Top each with a sprinkle of crushed graham crackers and a few chocolate chips. The graham crackers soften slightly over time, so add them no more than 4 hours before serving. If you're bringing the dip to a campsite, pack the jars in a cooler with ice packs. The dip stays good for 2 days refrigerated. For a dairy-free version, use plant-based cream cheese and coconut yogurt โ just check the label for stabilizers, as some separate when chilled.
