The Common Mistake

Many people seal their foil packets too loosely. A loose seal lets steam escape, and the food dries out or burns on the bottom. Fold the long edges together twice, pressing firmly, then crimp the short ends like a store-bought envelope. The packet should feel tight but not bulging. Leave about an inch of air space inside for circulation.

Cooking Over Fire or Stove

For a campfire, let the flames burn down to glowing coals—about 30 minutes for a medium fire. Place the packets on a grate 4-6 inches above the coals. If you don’t have a grate, you can nestle packets directly into the coals, but rotate them every 5 minutes to prevent burning. On a camp stove, medium heat is enough; check the flame isn’t licking up the sides of the packet.

Cook time depends on heat intensity. At 18 minutes, the vegetables are crisp-tender. At 22 minutes, they’re soft. I test by poking a zucchini piece through the foil with a fork—if it slides in easily, it’s done. Let the packet rest for 2 minutes before opening. That steam is hot enough to blister skin, so open the far end first, away from your face.

Serve in individual bags of pork rinds (the “shell”) with shredded cheese, sour cream, and diced avocado. No bowls needed, no utensils except a fork.
