Step-by-Step Assembly Technique

1. Make the spread first. In a bowl, combine tahini, lemon juice, water, smoked paprika, garlic powder, and salt. Stir with a fork until smooth. This takes about 30 seconds. If it seizes up (tahini can do that), add another teaspoon of water. The final texture should be like thick salad dressing—not runny, but spoonable.

2. Prep the lentils. Open the pouches and drain any liquid. Don't rinse them—you want the natural starch to help bind the mixture. Add the lentils and chopped sun-dried tomatoes to the bowl. Use a fork to mix and lightly mash about half the lentils. This creates a texture that holds together in the wrap, not a bowl of loose beans. The common mistake is to leave the lentils whole; they'll fall out with every bite.

3. Build the wrap. Lay a tortilla flat. Spoon 1/3 cup of the lentil mixture in a line down the center, leaving 2 inches at each end. If using spinach, add a small handful on top. Fold the two sides over the filling, then fold the bottom up over the filling and roll tightly. The tighter the roll, the less air gets in, and the less likely it is to dry out.

4. Wrap for the trail. Heavy-duty foil is my go-to. Cut a piece large enough to fully encase the wrap. Roll the wrap in the foil, twisting the ends like a candy wrapper. This keeps the wrap intact and creates a barrier against dirt and moisture. For a zero-waste option, use beeswax wraps—they breathe just enough to prevent condensation while keeping the wrap secure.

Packing and Timing

These wraps hold at room temperature for up to 4 hours when the temperature is below 90°F. If you're hiking in summer heat, pack them in a shaded part of your pack or use a small ice pack. The ingredients are all shelf-stable, so there's no dairy or meat to worry about, but direct sun can still make the tortilla sweat. For multi-day trips, store the lentil mixture in a sealed bag in the cooler, and assemble fresh wraps each morning. The mixture keeps for 2 days in a properly chilled cooler.
