Step-by-Step: Timing and Technique

1. Slice meat thin. Partially frozen meat slices easier. Aim for 1/4-inch thick pieces. Thicker pieces take longer to cook, and the vegetables will overcook while you wait.

2. Preheat the griddle fully. A cold griddle sticks. Let it heat for about 5 minutes on medium-high. A drop of water should skitter across the surface and evaporate in a second.

3. Cook the meat first. Spread it in a single layer. Don't touch it for two minutes. This lets the browning develop. Flip and cook another minute or two. Transfer to a plate. The meat will finish heating through when it goes back in the pan with the sauce.

4. Vegetables next. Add oil, then the bell peppers, zucchini, and broccoli. Stir every 30 seconds. Look for bright green broccoli and slight char on the pepper edges. That's the sweet spot—about 3 to 4 minutes.

5. Aromatics last. Push vegetables to the side. Add garlic and ginger to the empty space. They burn fast. Thirty seconds is enough.

6. Combine and sauce. Return the meat to the griddle. Pour the sauce over everything. Stir constantly for 1 to 2 minutes. The sauce will thicken and coat each piece. When it clings to the back of a spoon, it's done.

Adapting for a Camp Stove or Skillet

No Blackstone? Use a large cast iron skillet on a camp stove or over a fire. The key is to work in batches. Cook the meat first, remove it, then cook the vegetables. Combine everything at the end with the sauce. A smaller pan means less surface area, so overcrowding happens faster.

If you're cooking over an open fire, use a tripod or grate to hold the skillet. Adjust the height to control heat. Lower for more heat, higher for less. Keep a spray bottle of water nearby to tame flare-ups.

What to Serve With It

Instant rice is the easiest camping companion. Boil water, add rice, cover, and wait 10 minutes. Pre-cooked rice pouches work too—just warm them on the griddle after the stir fry is done. For a low-carb option, serve over cauliflower rice or eat it as is.
